Egg gratin with mashed potatoes

Instructions:

Preparing the Mashed Potatoes
  1. Place the diced potatoes in a large pot and cover them with water.
  2. Bring the water to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain the potatoes and return them to the pot.
  4. Add the butter, minced garlic, dried thyme, salt, and pepper to the pot.
  5. Mash the potatoes until smooth and creamy, then set aside.
Assembling the Gratin
  1. Preheat your oven to 375°F (190°C).
  2. Spread the mashed potatoes evenly in the bottom of a greased baking dish.
  3. Create four wells in the mashed potatoes with the back of a spoon.
  4. Crack an egg into each well, taking care not to break the yolks.
  5. Pour the heavy cream over the eggs and mashed potatoes.
  6. Sprinkle the grated Gruyere cheese and Parmesan cheese over the top.
Baking to Perfection
  1. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny.
  2. Remove from the oven and let it rest for a few minutes before serving.
Serving and Garnishing
  1. Sprinkle chopped fresh parsley over the top for a burst of color and flavor.
