Instructions:
Preparing the Mashed Potatoes
- Place the diced potatoes in a large pot and cover them with water.
- Bring the water to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot.
- Add the butter, minced garlic, dried thyme, salt, and pepper to the pot.
- Mash the potatoes until smooth and creamy, then set aside.
Assembling the Gratin
- Preheat your oven to 375°F (190°C).
- Spread the mashed potatoes evenly in the bottom of a greased baking dish.
- Create four wells in the mashed potatoes with the back of a spoon.
- Crack an egg into each well, taking care not to break the yolks.
- Pour the heavy cream over the eggs and mashed potatoes.
- Sprinkle the grated Gruyere cheese and Parmesan cheese over the top.
Baking to Perfection
- Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny.
- Remove from the oven and let it rest for a few minutes before serving.
Serving and Garnishing
- Sprinkle chopped fresh parsley over the top for a burst of color and flavor.
- Serve hot, and enjoy the creamy, indulgent goodness of Egg Gratin with Mashed Potatoes.
