Ingredients:
- 2 pounds beef sirloin or flank steak, thinly sliced
- 1 cup shredded cheese (such as mozzarella, provolone, or Swiss)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- Salt and pepper, to taste
- Butcher’s twine or toothpicks (for securing the roulades)
- Beef broth or red wine (for deglazing, optional)
Directions:
- Preheat your oven to 375°F (190°C).
- Lay the thinly sliced beef on a clean work surface and season with salt and pepper.
- Spread a layer of shredded cheese evenly over each slice of beef, leaving a small border around the edges.
- Sprinkle minced garlic, chopped parsley, and chopped thyme over the cheese.
- Starting from one end, tightly roll up each slice of beef into a spiral shape, securing the seams with butcher’s twine or toothpicks as needed.
- Heat olive oil in a large ovenproof skillet over medium-high heat.
- Carefully place the beef roulades seam-side down in the skillet and sear for 2-3 minutes on each side, or until golden brown.
- Transfer the skillet to the preheated oven and bake the roulades for 15-20 minutes, or until the beef reaches your desired level of doneness and the cheese is melted and bubbly.
- Optional: Remove the skillet from the oven and deglaze the pan with beef broth or red wine, scraping up any browned bits from the bottom of the skillet to incorporate into the sauce.
