CHICKEN FRIED RICE

This easy Chicken Fried Rice is loaded with golden brown chicken, sweet onions, carrots, peas, eggs, and green onions and tastes so much better than your favorite Chinese take-out.  You don’t know how good fried rice can be till you make it in your own kitchen.

So often, fried rice dishes are loaded with so much soy sauce that is the dominant flavor.  This delectable recipe brings out the best in this dish with a minimal amount of soy sauce. My family just loves this, and it is always a huge hit with friends. Who doesn’t love a good fried rice recipe?

Ingredients:

1 1/2 teaspoons sesame oil or to taste

4 large Eggs

5 c cooked white rice chilled*

2 tablespoons soy sauce (or GF Tamari) or added to taste*

3 tablespoons extra light olive oil or high heat cooking oil

12 ounces frozen peas and carrots fully thawed

1/4 c green onion chopped

1 pound chicken thighs boneless, skinless, and trimmed

1/2 teaspoon sea salt

1/4 teaspoon black pepper
