Ingredients
To make this hearty and delicious chicken noodle soup, gather the following ingredients:
For the Broth
- 1 whole chicken (about 3-4 lbs), cleaned and cut into parts
- 10 cups of water
- 2 large carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 large onion, quartered
- 5 cloves of garlic, crushed
- 1 bay leaf
- 1 teaspoon of dried thyme (or 4-5 fresh thyme sprigs)
- 1 teaspoon of dried rosemary
- Salt and freshly ground black pepper, to taste
For the Soup
- 2 large carrots, peeled and thinly sliced
- 2 celery stalks, thinly sliced
- 1 medium onion, finely chopped
- 8 oz (225g) egg noodles or any preferred noodles
- 1 tablespoon olive oil
- Fresh parsley, chopped, for garnish
- Fresh lemon juice (optional), to taste
