Ingredients

To make this hearty and delicious chicken noodle soup, gather the following ingredients:

For the Broth

  • 1 whole chicken (about 3-4 lbs), cleaned and cut into parts
  • 10 cups of water
  • 2 large carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 large onion, quartered
  • 5 cloves of garlic, crushed
  • 1 bay leaf
  • 1 teaspoon of dried thyme (or 4-5 fresh thyme sprigs)
  • 1 teaspoon of dried rosemary
  • Salt and freshly ground black pepper, to taste

  • 2 large carrots, peeled and thinly sliced
  • 2 celery stalks, thinly sliced
  • 1 medium onion, finely chopped
  • 8 oz (225g) egg noodles or any preferred noodles
  • 1 tablespoon olive oil
  • Fresh parsley, chopped, for garnish
  • Fresh lemon juice (optional), to taste
