- Cook the pasta according to package instructions. Drain and set aside.
- In a bowl, toss the shrimp with Cajun seasoning until well coated.
- In a large skillet or pan, heat olive oil over medium-high heat. Add the seasoned shrimp and cook until pink and opaque. Remove shrimp from the pan and set aside.
- In the same pan, add the sliced smoked sausage and cook until browned. Remove sausage from the pan and set aside.
- In the same pan, add chopped onion and cook until softened. Add minced garlic and cook for an additional minute.
- Add sliced bell pepper and halved cherry tomatoes to the pan. Cook until the vegetables are slightly tender.
- Pour in the chicken broth and heavy cream. Bring the mixture to a simmer.
- Return the cooked shrimp and sausage to the pan. Season with salt and black pepper to taste. Allow the mixture to simmer for a few minutes to let the flavors meld.
- Add the cooked pasta to the pan and toss until everything is well coated with the sauce.
- Serve the Cajun shrimp pasta with sausage hot, garnished with fresh parsley. Optionally, sprinkle with grated Parmesan cheese.
