1. Prepare the Kielbasa

Start by slicing the kielbasa sausage into thin rounds or slices, depending on your preference. Heat a skillet over medium heat and cook the kielbasa until it’s browned on both sides and heated through, about 5-7 minutes. Set the cooked kielbasa aside on a paper towel to drain any excess grease.

2. Toast the Sauerkraut

In the same skillet, add a small amount of butter if necessary and toast the sauerkraut for 2-3 minutes. This step helps to reduce some of the moisture and enhance the tangy flavor of the sauerkraut. You can also sprinkle in caraway seeds at this point for extra flavor if desired. Once lightly browned, remove the sauerkraut from the pan and set it aside.

3. Assemble the Sandwiches

To assemble your Kielbasa Reuben, take 4 slices of rye bread and spread a generous layer of Thousand Island dressing on one side of each slice. Place a slice of Swiss cheese on top of the dressing on each piece of bread. Next, layer the kielbasa slices evenly over the cheese, followed by a portion of the toasted sauerkraut. Finally, top the sandwich with another slice of rye bread, dressing side down.

4. Grill the Sandwiches

Heat a large skillet or griddle over medium heat. Spread butter on the outside of each sandwich to help it crisp up nicely when grilled. Place the assembled sandwiches in the skillet and grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
