Instructions for Making Cheesy Chicken Quesadillas
Step 1: Season the Chicken
- If using cooked chicken, shred or dice it into small pieces and place it in a mixing bowl.
- Add the chili powder, cumin, garlic powder, salt, and pepper. Toss the chicken with the spices to coat evenly.
Step 2: Prepare the Filling
- In a separate bowl, combine the shredded cheese, bell pepper, and red onion.
- Mix well to evenly distribute the cheese and vegetables.
Step 3: Assemble the Quesadillas
- Lay out the flour tortillas on a flat surface.
- On one half of each tortilla, layer a portion of the seasoned chicken and top it with the cheese and vegetable mixture.
- Fold the tortilla over the filling to create a half-moon shape.
Step 4: Cook the Quesadillas
- Heat olive oil or butter in a large skillet over medium heat.
- Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden and crispy, and the cheese is fully melted.
- Repeat with the remaining quesadillas, adding more oil or butter if needed.
Step 5: Slice and Serve
- Allow the quesadillas to cool for a minute, then slice each one into wedges.
- Serve warm with sour cream, guacamole, salsa, and a sprinkle of chopped cilantro if desired.
