Instructions
To make these delicious Churro Stuffed Cheesecake Bites, follow these steps closely. From creating the creamy filling to frying up the churro bites, this recipe ensures that each bite is irresistibly flavorful.
Step 1: Prepare the Cheesecake Filling
- In a mixing bowl, combine the softened cream cheese, 1/4 cup sugar, and vanilla extract.
- Beat until the mixture is smooth and creamy, then transfer it to a piping bag. Place the filled piping bag in the refrigerator to firm up while you prepare the churro dough.
Step 2: Make the Churro Dough
- In a medium saucepan, combine 1 cup of water, butter, 1 tablespoon sugar, and salt. Bring the mixture to a boil over medium heat.
- Once it boils, reduce the heat to low, add flour all at once, and stir continuously until the dough forms a ball and pulls away from the sides of the pan.
- Remove the dough from heat and let it cool for about 5 minutes. This prevents the eggs from cooking when added.
- After cooling slightly, add eggs, one at a time, beating well after each addition until the dough is smooth and shiny. Transfer the dough to a piping bag fitted with a star-shaped tip for that classic churro look.
Step 3: Pipe and Shape the Churro Bites
- Cut parchment paper into small squares to prevent the dough from sticking during frying.
- Pipe small circles of dough onto each square of parchment paper, forming a ring or a spiral, depending on your preference.
- Place a small dollop of chilled cheesecake filling in the center of each churro ring, then cover with another small ring of churro dough to encase the filling completely.
Step 4: Heat the Oil for Frying
- In a large pot or deep skillet, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil stays at the right temperature for even frying.
Step 5: Fry the Churro Cheesecake Bites
- Carefully place each filled churro bite, parchment paper side up, into the hot oil. After a few seconds, peel off the parchment paper using tongs.
- Fry each churro bite for 2-3 minutes on each side, or until they turn golden brown and crispy.
- Remove the bites from the oil and place them on a paper towel-lined plate to absorb excess oil.
Step 6: Coat in Cinnamon Sugar
- In a shallow bowl, mix 1/2 cup sugar and 1 teaspoon ground cinnamon.
- While the churro bites are still warm, roll them in the cinnamon-sugar mixture until they’re fully coated.
Step 7: Serve and Enjoy!
Serve the Churro Stuffed Cheesecake Bites warm for the best texture and flavor. Enjoy the crispy, cinnamon-coated exterior with a rich, creamy cheesecake filling that melts in your mouth!
