Step-by-Step Instructions

1. Prepare the Cheese Mixture

  1. In a large mixing bowl, combine softened cream cheese, shredded cheddar, and grated Parmesan.
  2. Add in the garlic powder, onion powder, smoked paprika, salt, and pepper. Mix thoroughly with a rubber spatula or hand mixer until the ingredients are well blended and smooth.
  3. Place the cheese mixture in the refrigerator for 10-15 minutes. This will make it easier to shape into mini cheese balls.

2. Prepare the Coating Ingredients

  1. While the cheese mixture chills, prepare the coating ingredients. Place the chopped bacon, chopped chives, chopped parsley, and pecans (if using) on a large plate or shallow dish.
  2. Toss the ingredients together until they’re evenly mixed. This will create a flavorful and colorful coating for the cheese balls.

3. Form the Mini Cheese Balls

  1. Remove the chilled cheese mixture from the refrigerator. Using a small spoon or cookie scoop, portion out about 1 tablespoon of cheese mixture for each mini cheese ball.
  2. Roll each portion between your palms to form a smooth ball, then set aside on a parchment-lined plate or tray.

4. Roll the Cheese Balls in the Coating

  1. Gently roll each cheese ball in the prepared bacon-herb mixture, pressing lightly to ensure the coating sticks.
  2. Make sure each cheese ball is fully coated on all sides, then place them on the serving platter.

5. Serve or Store the Mini Cheese Balls

  1. These cheese balls can be served immediately, but they taste even better after chilling for 30 minutes to let the flavors meld.
  2. If preparing ahead, cover the tray with plastic wrap and refrigerate until ready to serve. They can be stored in the refrigerator for up to 2 days.
