1. Prepare the Peach Filling
- In a medium bowl, combine the diced peaches, sugar, cornstarch, vanilla extract, and ground cinnamon. Toss until the peaches are evenly coated.
- Let the mixture sit for 10 minutes to allow the flavors to meld and the juices to thicken slightly.
2. Prepare the Puff Pastry
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the thawed puff pastry sheets to smoothen any creases. Cut each sheet into 4 equal squares.
- Place a spoonful of the peach filling in the center of each square. Be careful not to overfill, as the filling may spill out during baking.
3. Shape and Seal the Turnovers
- Fold each square diagonally to form a triangle, enclosing the filling.
- Use a fork to crimp the edges firmly, ensuring the turnovers are sealed.
- Place the turnovers on the prepared baking sheet. Brush the tops with beaten egg for a golden finish.
4. Bake the Turnovers
- Bake in the preheated oven for 18-22 minutes, or until the turnovers are golden brown and puffed.
- Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Dust with powdered sugar for a finishing touch, if desired.
