For the Cottage Cheese Layer
- 1 cup cottage cheese
- 2 tablespoons honey (or maple syrup)
- 1 teaspoon vanilla extract
For the Cherry Topping
- 1 cup fresh or frozen cherries (pitted)
- 2 tablespoons sugar (or a natural sweetener like honey)
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch mixed with 1 tablespoon water
Step-by-Step Instructions
Step 1: Prepare the Cake Batter
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, almond flour, unsweetened cocoa powder, brown sugar, baking powder, baking soda, salt, and optional cinnamon. Mix until evenly distributed.
- In another bowl, whisk together the almond milk, melted coconut oil, eggs, and vanilla extract until smooth.
- Gradually pour the wet mixture into the dry ingredients. Stir gently until the batter is smooth and free of lumps.
- Fold in the chopped dark chocolate for bursts of rich flavor in every bite.
- Pour the batter into the prepared cake pan. Sprinkle sliced almonds over the top for added crunch and nutty flavor.
Step 2: Bake the Cake
- Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 3: Blend the Cottage Cheese Layer
- While the cake cools, prepare the cottage cheese topping. In a food processor or blender, blend cottage cheese, honey, and vanilla extract until smooth and creamy.
- Place the blended mixture in the refrigerator to chill while you prepare the cherry topping.
