Step 1: Prepare the Crust
- In a large mixing bowl, combine the oat flour and salt.
- Add the melted coconut oil and applesauce, mixing until the mixture resembles coarse crumbs.
- Gradually add the ice-cold water, one tablespoon at a time, until the dough comes together but is not sticky.
- Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Step 2: Make the Filling
- In a large skillet, combine the sliced apples, maple syrup, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 5-7 minutes, stirring occasionally, until the apples soften slightly.
- In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry. Add this to the apple mixture and cook for an additional 2 minutes, allowing the filling to thicken.
- Remove from heat and stir in the vanilla extract. Set aside to cool.
Step 3: Roll Out the Crust
- Preheat your oven to 350°F (175°C).
- On a lightly floured surface, roll out the chilled dough into a circle approximately 12 inches in diameter.
- Carefully transfer the crust to a 9-inch pie dish, pressing it gently into the bottom and sides. Trim any excess dough hanging over the edges.
