For Frying and Finishing:

  • 4 cups (1L) vegetable oil (for frying)
  • ½ cup (100g) granulated sugar or powdered sugar (for coating)

Step-by-Step Instructions

Step 1: Prepare the Dough

  1. In a small bowl, combine the warm milk and yeast, letting it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine the flour, sugar, and salt.
  3. Add the yeast mixture, melted butter, eggs, and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for 8-10 minutes, or until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until it doubles in size.

Step 2: Prepare the Chocolate Filling

  1. In a saucepan over medium heat, warm the heavy cream until it just begins to simmer.
  2. Remove the cream from heat and pour it over the chocolate chips in a heatproof bowl.
  3. Stir until the chocolate melts completely, creating a smooth ganache.
  4. Mix in the vanilla extract and allow the ganache to cool slightly before transferring it to a piping bag.

Step 3: Shape the Donuts

  1. Punch down the risen dough and roll it out on a floured surface to about ½ inch (1.2cm) thickness.
  2. Use a round cutter to cut out circles, about 3 inches (7.5cm) in diameter.
  3. Place the dough circles on a baking sheet lined with parchment paper, cover, and let them rise for another 30-45 minutes.

Step 4: Fry the Donuts

  1. Heat the vegetable oil in a large pot to 350°F (175°C).
  2. Fry the donuts in batches, cooking for 1-2 minutes per side, until golden brown.
  3. Remove the donuts with a slotted spoon and drain on paper towels.
