Ingredients:
- 2 medium zucchini, grated (about 2 cups)
- 1 teaspoon salt
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (such as parsley, basil, or dill)
- 2 cloves garlic, minced
- 1/4 cup finely chopped onion
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- Olive oil, for brushing
Directions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
- Place the grated zucchini in a colander set over a bowl. Sprinkle the salt over the zucchini and let it sit for 10-15 minutes to release excess moisture.
- Squeeze the grated zucchini with your hands to remove as much liquid as possible. Transfer the squeezed zucchini to a clean kitchen towel and squeeze again to remove any remaining moisture.
- In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, chopped herbs, minced garlic, chopped onion, black pepper, and beaten eggs. Mix until well combined.
- Using your hands, shape the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. Place the patties on the prepared baking sheet, leaving a little space between each one.
- Lightly brush the tops of the patties with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until the patties are golden brown and crispy on the outside, flipping halfway through baking for even browning.
- Remove the patties from the oven and let them cool slightly before serving.
