Ingredients:
- 1 lb fresh crab meat, picked over for shells
- 1 lb large shrimp, peeled and deveined
- 4 tbsp unsalted butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups seafood or chicken broth
- 1 cup heavy cream
- 1/4 cup dry sherry
- 2 tbsp tomato paste
- 1 bay leaf
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
1. Prepare the Seafood
Begin by preparing the fresh seafood. Ensure that the crab meat is free from any shells and set it aside. Peel and devein the shrimp, then rinse them under cold water and pat dry with paper towels. Cut the shrimp into bite-sized pieces if desired.
2. Saute Aromatics
In a large pot or Dutch oven, melt the butter over medium heat. Add the finely chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
