For Serving:

  • Pretzel sticks
  • Breadsticks
  • Vegetable sticks (carrots, celery, bell peppers)

Step-by-Step Instructions

1. Cooking the Sausage

Start by heating the olive oil in a large skillet over medium heat. Add the hot Italian sausage and cook, breaking it up with a wooden spoon, until it is browned and cooked through. This should take about 8-10 minutes. Once cooked, remove the sausage from the skillet and set it aside, leaving any rendered fat in the pan.

2. Sautéing the Aromatics

In the same skillet, add the finely chopped onion and cook until it becomes translucent, about 5 minutes. Then, add the minced garlic and cook for an additional 1-2 minutes, until fragrant. Be careful not to burn the garlic, as it can become bitter.

3. Adding the Beer

Pour in the beer, scraping up any browned bits from the bottom of the skillet. Allow the beer to simmer for about 3-4 minutes, reducing slightly. This will infuse the dip with a rich, malty flavor.

4. Incorporating the Cheeses

Reduce the heat to low and add the softened cream cheese, stirring until it is completely melted and smooth. Then, gradually add the shredded sharp cheddar cheese and shredded mozzarella cheese, stirring constantly until all the cheese is melted and the mixture is smooth and creamy.
